Banana Loaf with Rum Cream Cheese Swirl

Bananas are one of the most versatile fruit on the market. One of my favorite childhood food is Banana Fritters. The recipe includes a simple mixture of flour, mashed ripe bananas, brown sugar, flour and baking powder. In addition, Vanilla extract and nutmeg are often added as flavoring agents. The batter is then shallow fried in vegetable oil until golden brown.

Save Your Over-ripe Bananas

If your bananas are over-ripe, do not through them out. Peel them and place in zip locker bags and throw in the freezer for later use.

 

 

 

 

Ripe Bananas are versatile and can be used to make a smoothie, eaten as a breakfast item, a snack or use to make my Banana Rum Cream Cheese Loaf.

Nutrition Facts: 

Even though bananas come in different shapes, sizes and various species, they are all packed with good nutrition. They contain:  potassium (~400 mg), ~3 grams dietary fiber, Vitamin C,  Vitamin B6 and very low in calorie ~100 -110 calories depending on the size of the banana

Adding swirls of  Coconut Bacardi Rum cream cheese into batter take this banana loaf recipe to the next level.

 

 

The Banana Rum Cream Recipe:

2 cups all-purpose flour

1/2 cup old fashion rolled oats

1/2 cup brown sugar

2 eggs

2 1/2 cups mashed over ripe bananas

1/2 cup melted butter

2 teaspoons baking soda

1 teaspoon salt, nutmeg and vanilla extract

1/4 cup sunflower seeds

Instruction:

Combine mashed bananas, sugar, melted butter salt, eggs, salt, and the vanilla extract and mix well.

Combine all dry ingredients and marry with the banana mixture. 

Pour mixture into a greased loaf pan. 

Drizzle rum cream cheese mixture and swirl into banana mixture. 

Bake  into a 350 °F for 40 minutes or until inserted knife comes out clean from the center.

 

Rum Cream Cheese Swirl

1 cup Cream Cheese

1/4 cup confection Sugar

2-3 tablespoons Coconut Bacardi Rum

Combine these ingredients in a separate bowl, mix until smooth.

    Banana bread always a go to recipe. Definitely love your twist with rum. We substituted with cup for cup and plant based dairy and it was fantastic!
