Banana Maple Bread Recipe With Chia Seeds and Oats.
Equipment
- Oven
- Two (9 x 5 ) Loaf Pan
- Whisk
- Mixing Bowls
- Spoon
- Strainer or Seive
Ingredients
- 1 cup All-Purpose Flour
- 6 small Ripe Bananas
- 1 cup Stonyfield Vanilla Yogurt
- 3 medium Eggs
- 1 cup Old Fashion Oats
- ⅓ cup Light Brown Sugar
- ½ cup 100% Pure Maple Syrup
- 1 cup Vanilla Almond Milk
- 1½ tsp. Baking Powder
- ¼ cup Land O Lakes Cinnamon Butter
- 1 tsp. Vanilla Extract
- 2 tbsp. Chia Seeds
- 1 tsp. Coconut Extract
- 6 whole Maraschino Cherries (optional)
- 1 tsp. Nutmeg, grated
- 1 tsp. Salt
Instructions
- Preheat the oven to 375 °F.
- Mash ripe bananas with a fork or food masher in a mixing bowl until uniform.
- To the mashed bananas, add the cinnamon brown sugar butter, and brown sugar. Thoroughly combine. In addition, the consistency of the cinnamon butter is perfect for this recipe. It allows for easy incorporation into the mashed bananas. In addition, it adds more flavor to the bread.Combine the eggs, salt, yogurt, vanilla and coconut extract, nutmeg, maple syrup, and chia seeds with the banana mixture in the same mixing bowl. Mix all of the ingredients together with a whisk.
- Sift together the flour and baking powder in a separate bowl. Gradually incorporate the flour mixture into the wet ingredients.
- Add the old-fashioned oats to the mixture and thoroughly combine. Allow the mixture to rest for 5 minutes at room temperature.
- Spray two 9-by-5-inch loaf pans with oil spray. Pour the batter into each pan evenly. Scrape the batter from the bowl with a spatula.
- I decorated the banana loaf with maraschino cherries. However, this step is optional.
- Place the loaf pans on the middle shelf of the preheated oven and bake for 35 minutes, or until a knife inserted comes out clean.
- Allow the banana maple bread with chia seed and oats to cool in the pan for about 30 minutes before removing it from the pan. Allow the bread to cool completely after removing it from the pan before cutting. Enjoy!
