There are numerous varieties of banana bread. However, this version is attractive, with a distinct flavor and texture. If the Jamaican phrase “tek yuh hand and mek fashion” were a dish, it would be our BANANA SORREL BREAD RECIPE. With less than ten ingredients easily found in a pantry, you and your family can enjoy this simple purple loaf sweet treat as a healthier snack or dessert.

Banana Sorrel Bread Recipe: A Purple Loaf.

Let's "tek our hands and mek fashion" Whenever I have overripe bananas, I make banana bread or banana fritters. However, this time, I chose to combine my sorrel puree and banana bread recipe.
When you look at my Sorrel Bundit Cake, you'll notice that my Banana Sorrel Bread is just a distant cousin. I promise you will enjoy the distinct flavors and textures that this purple loaf has to offer.

  • Bread Loaf Pan (8 x 4)
  • Mixing Bowl
  • Oven
  • Whisk or Hand Mixer
  • Spatula

Ingredients
  

Purred Sorrel Ingredients

  • 1 Bag Dried Sorrel (3½ ounces)
  • 1½ cups Water
  • ¼ cup Jamaican White Rum (optional)

Banana Sorrel Ingredients

  • 2 medium Bananas, extra ripe.
  • ½ cup Pureed Sorrel
  • 1 cup Old Fashion Rolled Oats
  • ½ cup All Purpose Flower
  • 2 small Eggs
  • ½ cup Light Brown Sugar
  • 2 tsps. Cinnamon Powder
  • ½ cup Vegetable Oil
  • 1½ tsps. Vanilla Extract
  • 1 can Oil Spray
  • ½ cup Water, room temperature
  • 1 tsp. Salt

Let's Make The Sorrel Puree

  • You may find the recipe for Sorrel Bundit Cake HERE. Sorrel puree is easy to make. In a covered saucepan, boil dried sorrel in 1 ½ cups water for 3-5 minutes.

  • Dump the warm sorrel in a blender or food processor. Puree the cooked sorrel petals until smooth and creamy.
    I added roughly ¼ cup of Jamaican White rum as a preservative agent. However, this step is optional and you can use your favorite rum.
    Allow the pureed sorrel to cool before spooning it into a glass jar and storing it in the refrigerator.

Easy Banana Sorrel Bread

  • Preheat the oven to 350 ℉

  • In a mixing bowl, mash two extra ripe bananas with a whisk or fork.
    To the mashed bananas, combine the eggs, cinnamon powder, water, vanilla essence, salt, and vegetable oil. In this recipe, I used olive oil, but you can use any oil you choose.

  • Using a whisk or hand mixer, combine all of the ingredients until you get an even reddish-purple batter. Mix in the brown sugar until dissolved throughout the batter.

  • Combine the all-purpose flour, baking powder, and rolled oats with the banana sorrel batter. Use the whisk to completely combine the wet and dry ingredients.

  • Grease an 8 by 4 inches Bread Loaf Pan with an Oil Spray. You may also use vegetable oil. Pour the banana sorrel batter into the loaf pan.
    This step is optional, I topped the banana sorrel bread with a few maraschino cherries as a decorative element.

  • Bake in the oven for 30 to 35 minutes, or until a knife inserted comes out clean. Remove and let the purple loaf cool before slicing
    Purple loaf serves approximately 6 people.

Baking Tips

  • I like banana bread that is dense in texture. If you like a lighter texture loaf, in this recipe use 2 teaspoons baking powder, 1 cup all-purpose flour, and ½ cup rolled oats.
    To make this recipe gluten-free, consider replacing the all-purpose flour with Cassava Flour. I have used this flour before in baking, but have not experimented with using it in this recipe
