Home-made pizzas are ideal for breakfast, lunch or dinner. This was my first time using the Jamaica’s National Fruit  as a topping for pizza.
Ackee and codfish is Jamaica’s National Dish . This dish is usually served as a breakfast item with a starch item such as: dumplings, yam and/or Breadfruit. The Ackee and Codfish Pizza is another non-traditional way to explore and showcase the Jamaica’s national fruit.

Ackee and Codfish pizza

Here Are The Pizza Ingredients You Need:

3 cups Ackee, cooked
1 cup cooked codfish, flaked
2 Stonefire flatbread
1 cup extra sharp white cheddar cheese, grated
1/2 cup Mozzarella grated cheese
3 Goya Piquillo red peppers
4 pegs garlic, finely dices
1/2 cup onion, finely chopped
1 cup Ragu pizza sauce
Preheat oven to 350 F degrees.

Instructions:

Prepare Ackee and Codfish Topping:

Add 3 tablespoons olive oil to a skillet pan.
Add garlic and onion, turn flame on and cook for up to 1 minute, avoid burning.
Stir in flaked codfish and cook for 1-2 minutes
After ackee is boiled until tender, add cooked ackee  to codfish mixture.
Season with black pepper, thyme and rosemary and cook for another 2 minutes, stirring constantly.

Let’s Layer the Jamaican Flavor:

On a metal tray, lay 2 flatbreads and evenly spread pizza sauce onto to pizza bread.
Add half of cheeses onto the 2 flatbreads.
Evenly distribute ackee and codfish mixture to flatbread.
Add peppers, then top off with remaining cheddar and mozzarella cheeses.
Bake in 350 F degree oven for 15 minutes or until cheese melt and crust is golden brown.

Pizza Dough Options

Pizza dough can be purchased from your local supermarket or you can make your own dough from scratch. However, i choose Naan Stonefire Bread as my pizza base because they are buttery soft, and fluffy. There are many other brands of flat breads that can be used.

  1. This wouldn’t be my usual go to for ingredients on pizzas. I like cod but not sure about it with cheese. It looks good though! Thank you for sharing this interesting recipe!

  2. A+ for your creativity. A+ for making me curious about the flavour that I know it is bursting with. I am assuming the codfish can be salted or fresh. I love ackee and saltfish; I can only imagine it on pizza.
