Jerk Shrimp In Creamy Coconut Sauce
Equipment
- Aluminum Pot
- Cutting Board
- Knife
- Mixing Bowls
- Wooden Spoon
- Vegetable Peeler
- Can Opener
Ingredients
Jerk Shrimp
- 2 Packs EZ Peel Shrimp with Tail on (1 ½ lbs)
- ¼ cup Olive Oil or Vegetable Oil
- 3 tbsp. Jerk Seasoning
- 1 tbsp Smoked Paprika
- 2 tbsp. Complete Seasoning
Coconut Sauce
- 1 medium Yellow Onion, diced
- 2 cups Frozen Tri Vegetables Blend
- 1 can Coconut Milk
- 1 tsp. Salt
- 2 tsp. Black Pepper
- 1 tbsp. Pimento Seeds
- 2 Medium Carrots, sliced
- ½ cup Warm Water
Instructions
- Wash the shrimp in a mixing dish with cool running water. Remove the shell while keeping the tails attached. Season the peeled shrimp with the jerk marinade, complete seasoning, and smoked paprika. You can make your own jerk marinade using my Jerk Marinde Recipe or you can purchase the Jerk Seasoning from Amazon Fresh.Allow the shrimp to marinade for 2 hours or overnight in the refrigerator.


- Dice the onion on a chopping board. Using a vegetable peeler, peel the carrots and cut them into thin rings. Make sure the frozen sweet peppers are thawed and at room temperature. Place them aside.


- In a larger aluminum pot, heat oil for about 2 minutes. Brown the shrimp for about 1 minute on each side.


- Open the can of coconut milk and combine it with ½ cup of warm water in the same mixing dish where the shrimp has been marinating. The coconut milk will become reddish-brown. This is due to the residue of smoked paprika and jerk seasoning.
- Mix in the diced onions, sliced carrots, sweet peppers, and pimento seeds with a wooden spoon. Cook for 1 to 2 minutes.


- Pour the coconut milk mixture onto the shrimp and vegetable mixture and combined them together using a wooden spoon. Season with salt and pepper. Over medium heat, allow cooking for another 2 to 3 minutes or until the coconut sauce is reduced to a rich velvety texture.


- Take the cooked shrimp in creamy coconut sauce off the heat. This recipe feeds 6 to 8 people. Serve with your choice of starchy side items (mashed potatoes, dumplings, or cassava). My side dish of choice was vegetable rice, and everyone enjoyed their dinner.
