Meatless Monday Vegan Dish

The campaign against restricting meat from one’s diet for 1 day of the week has turned into a global movement. Giving your digestive system a break from digesting meat helps your body detox. Meatless Monday Dishes most often high in nutritive value because they most often include vegetables, fruits and a legume. Fruit, vegetables and beans are very high in fiber. Including them in your diet daily not only provide your body with vitamin and minerals, but their high fiber content act as a cleanser and detox for your digestive system.

Including beans or peas as a protein source in your Meatless Monday dishes keeps you full for longer. This a very quick and easy recipe. The flavors and different textures from each ingredient compliment each other. The sweetness of the red apples and sweet corn compliment the freshness of the cucumber and sweet pepper. This is a very simple and easy salad. This can even be made with your kids. 
Canned Broad Beans
Grace Broad Bean  were  used because of their texture. They are firmer compared to their rival Grace Butter Beans.  They are good source of Protein, Vitamin A , Vitamin C, Potassium Iron and fiber.

Broad Beans Quick Facts

Broad beans or Fava Beans has been been given its name to Favism, a genetic condition where people are deficient in an enzymes called Glucose 6 Phosphate Dehydrogenase Deficiency . This condition affects affects many people around the world, but mostly affect males. The enzyme deficiency breaks down the red blood cells prematurely. Consequently, this leads to a condition called hemolytic anemia. Signs and symptom of hemolytic Anemia are: paleness of the skin, tiredness, yellowing of the skin  and eyes, rapid heart rate, shortness of breath and  dark urine color.

Broad Beans Contain Lectins

Lectins are protein that are fund in many plant foods. However, researchers find that the Lectins in broad beans can slow the growth of cancer cells in the Colon.

Meatless Monday Recipe:

1 medium cucumber
1 cup can sweet corn or fresh corn off the husk
I medium tomato
1 medium gala apple
Broad Bean (1 1/2 cups)

1 tablespoon Lemon Juice

2 tablespoons olive oil
1 teaspoon rosemary, finely chopped
salt and black pepper to taste (optional)

Instructions:

In a bowl combine sweet corn diced cucumber, tomato and broad beans
Combine olive oil, lemon juice,  salt, pepper, and rosemary. Pour over salad mixture, stir and allow to marinate in refrigerator for 30 minutes.
