Peppered Steak With Carrot Rice

Peppered Steak with Carrot Raisin Brown Rice & Oven Roasted Broccoli/Radish.

Peppered Steak is one of my favorite steak dishes. Because the steaks are cut in strips they are cooked very fast and absorbs the juices from the sweet peppers and onions. 

Carrot Raisin Rice

This a great way to step up your rice game. I learned this recipe from a Trinidadian lady. Second to my Jamaica Rice and Peas, this is my favorite way to prepare rice. 

Here are the recipes for the meal:

Ingredients

4 pieces of steaks 1/4 inch thick

1 medium red sweet pepper, sliced

2 1/2 cups string beans

1/2 cups diced celery

1 medium onion, cut in wedges

1/3 cup olive oil

1 tablespoon brown sugar

1 tablespoon garlic powder

salt and black pepper to taste

2 tablespoons hot sauce (optional)

 

 

Instructions

1. Cut steak into 1/4 inch strips; season with salt, pepper, garlic and salt.

2. In a skillet add olive oil and heat for 1 min.

3. Add brown sugar to heated oil and allow to slightly brown in oil.

4. Add steak strips to oil/brown sugar mixture and stir until strip are browned. Leave to cook for 2 mins, stirring constantly to avoid burning.

5. Add 1/4 cup water, hot sauce and continue to cook for another 2 mins.

6. Stir in sweet peppers, onions, celery and string beans and allow to cook for another 5 mins.

7. Remove from flame.

CARROT RAISIN BROWN RICE

2 1/2 cups brown rice

2 1/2 cups shredded carrots

3/4 cups raisins

1 cube Knorr vegetarian vegetable Bouillon, crumbled.

1/2 cup diced celery

1/2 cup diced onion

1/4 cup olive oil

Instructions:

1. In a deep pot heat olive oil for 1 min,

2. Add bouillon cube, onions, celery. raisins, and carrots, stirring until translucent.

3. Add brown rice to mixture and constantly stir cooking for 1-2 mins.

4. Add 5 cups warm water,stir and cook until almost all water has evaporated; remove from flame.

Peppered Steak Dinner

Oven Roasted Broccoli & Radish

1. On a metal tray lay out radishes cut in half, and broccoli.

2. Drizzle olive oil, salt, pepper over and cook in a 400 degrees oven for 10 minutes or until slightly browned.
