Souperb Seafood and Vegetable Soup Recipe: A Bowl Of Ocean Flavors.
Equipment
- Large Pot or Sauce Pan
- Cutting Board
- Mixing Bowl
- Wooden Spoon
- Knife
- Vegetable Peeler
Ingredients
Souperb Fish Fillets
- 1½ lbs. Wild Caught Pacific Whiting Fish Fillet
- 1 tsp. Salt
- 2 tsp. Garlic Powder
- 1 tsp. Black Pepper
Season Shrimp
- 12 oz. Shrimp, EZ-Peel
- 1 tsp. Salt
- 2 tsp. Garlic Powder
- 1 tsp. Black Pepper
Other Souperb Veggie and Herb Ingredients
- 2 medium Sweet Potatoes, diced
- 1 packet Seafood Soup Mix
- 2 medium Green Scotch Bonnet Peppers
- 1 packet Vegetable Soup Mix
- 2 medium Carrots, sliced
- 3 springs Dried or Fresh Thyme
- 2 tbsp. Pimento Seeds
- 3 quarts Water
Instructions
Season The Seafood
- To help lessen the rawness, wash the shrimp in lemon or vinegar water. The shell of the shrimp is easily removed. However, I have decided to leave them on because they add another level of flavor to the soup.Season the shrimp with salt, pepper, and garlic powder to taste. Refrigerate for at least 2 hours or overnight.
- Repeat with the fish fillets. Remove from the lime or vinegar water. The fillet packet contained 5 whole whiting fillets. You can also use Pollock or any other fish you like.
- Cut each whiting fillet into 4 roughly equal pieces. Season them with the black pepper, salt and garlic powder. Place in the refrigerator to chill for 2 hours or overnight.
- Bring 3 quarts water, pimento seeds, and thyme leaves to a boil in a large aluminum pot. Remove the seasoned fish fillets and shrimp from the refrigerator and allow them to come to room temperature.
Lets Prepare The Vegetables
- All vegetables should be washed under warm running water. You can clean the grooves using a vegetable brush. Peel the carrots and sweet potatoes using a vegetable peeler. On a cutting board, dice the sweet potatoes into ½ to 1 inch cubes with a knife. If your carrots are thick, as mine are, cut them into about 3 mm thick slices after cutting them in half. With a knife, cut each corn on the cob into 2 to 3 inch pieces with care. Set aside the chopped vegetables.
- Add the cut veggies (corn, sweet potatoes, and carrots) to the boiling pimento-thyme water and cook for 5 minutes.
- Pour the two packets of soup mix into the vegetable mixture and stir thoroughly with a wooden spoon. If you want to reduce the salt content of the dish, replace the soup mixes with reduced sodium mixes or vegetable stock.
- Add the 2 green scotch bonnet peppers to soup mixture and cover pot with lid. Even though the peppers add a very unique flavor, be careful! Do not cut the peppers or allow them to burst. They are very hot. So if you do not like spicy or can not tolerate heat, you may want to leave them out of the recipe.
- Allow the ingredients to marry each other for another 5 minutes in the covered pot.
- Incorporate the seasoned fish and shrimp into the soup. Cook for 5 minutes more on low to medium heat with a covered lid.
- Remove the Souperb Seafood and Vegetable Soup from the flame. Serve warm to 6 to 7 people.
