Sweet and Sour Pork Jerk Pork Loin
Equipment

- Spoon

- Cast Iron Skillet
- Mixing Bowl
- Tongs

Ingredients
Pork Loin
- 1 lb. Pork Loin
- 3 tbsp. Jerk Seasoning
- ⅓ cup Corn Starch
- 2 tsp. Complete Seasoning
- 1 tsp. Salt
- ½ cup Peanut Oil
- 1 tsp. Black Pepper
Sweet and Sour Sauce
- 1 medium Red Bell Pepper, cubed
- ¾ cup Onion
- 1 medium Green Bell Pepper, cubed
- ¼ cup White Cane Vinegar
- 1 tsp. Dried Thyme
- ½ cup Sweet Chilli Sauce
- 5 cloves Garlic, crushed
- ⅓ cup Tomato Ketchup
- 3 tbsp. Raw Honey
- ½ cup Warm Tap Water
Mashed Potato (optional)
- 2 lbs Yellow/Gold Potatoes
- ½ cup Land O'Lake Garlic Herb Butter
- 1 bag Carrot and Sweet Peas
- 1 tsp. Salt
Instructions
Let's Prepare and cook Pork Loin
- Season pork loin with jerk seasoning, complete seasoning, salt, and pepper.
- Each pork piece should be cut into ½ to 1-inch strips. Marinate in a bowl in the refrigerator overnight.
- Remove the pork from the refrigerator and set it aside to come to room temperature before frying. Coat each pork strip with cornstarch. This allows the pork to crisp up and helps thickens the sweet and sour sauce.
- Heat the peanut oil in a cast iron skillet for 3 minutes. Place each coated pork strip in hot oil and cook for 2 to 3 minutes on each side, or until golden brown.
- Remove fried pork from hot oil and place on paper towels to drain excess oil using a tong. Set aside and proceed to the next step in the sweet and sour sauce preparation.
Prepare Sweet and Sour sauce
- Using a knife, cut vegetables into roughly cut cubes on a cutting board.
- Remove some of the remaining oil from the pot where the pork loin was fried. Add the onion, cubed sweet pepper, and garlic. Cook for 1 minute, stirring constantly.
- Combine the ketchup, sweet chili sauce, vinegar, water, thyme, and honey in a small mixing bowl. Pour sweet and sour sauce onto the sweet pepper mixture and mix well together.
- Add the fried pork loin strips to the sweet and sour sauce mixture. Combine together and allow to simmer for 5 minutes on medium heat
Mashed Potato
- You can serve the sweet and sour jerk pork with any side dish you want. However, it went well with my delicious and simple garlic herb mashed potatoes. I used the gold potatoes, but any potato may be used.
- Cube the potato, skin on, and cook in salted water until tender. Frozen Sweet Peas and Carrots should be cooked in water until soft.Drain the potatoes. Mash in the Land O'Lake Garlic Herb Butter with a whisk or a food masher. Add the carrot and peas and combine with a spoon.
