Meatless Monday Vegan Broad Bean Salad Recipe:
1 medium cucumber, diced
A cup of canned sweet corn or fresh corn off the cob
medium tomato, diced
A medium gala apple, cubed
1 can Broad Bean (1 1/2 cups)
1 tablespoon Lemon Juice
2 tablespoons olive oil
1 teaspoon rosemary, finely chopped
salt and black pepper to taste (optional)
Instructions:
Combine sweet corn, cucumber, tomato, and broad beans in a mixing bowl.
Mix the olive oil, lemon juice, salt, pepper, and rosemary in a small bowl.
Pour over the broad bean salad mixture and gently stir. Place in the refrigerator for 30 minutes to marinate and chill.
